Ingredients

  • A red capsicum sliced 
  • A diced red onion 
  • 1 sausage sliced 
  • 1 tin of crushed tomatoes 
  • 1 teaspoon of garlic 
  • 1 teaspoon of ground coriander 
  • 1 teaspoon of paprika 
  • Chilli flakes to taste 
  • Salt 
  • Pepper 
  • 50ml of chicken stock 
  • 4 eggs 
  • Grated cheese to taste

Method

Start by frying your sliced capsicum in a heated skillet or iron frying pan for a minute and add in the onion and sausage. Cook for 4-5 minutes.

Next, add the garlic, spices and seasoning and stir. Once fragrant, add your tin of tomatoes and let it simmer for a few minutes. Incorporate the chicken stock and cook until the sauce thickens. 

Make four wells in your mixture and crack and edge into each indent. Sprinkle on the cheese and season to your liking. Cover, and situate in campfire coals. Keep cooking for ten minutes or to your liking.

Breakfast burrito

If you’re looking for a brilliantly simple breakfast option that you can wrap up and eat on the go, then look no further than the breakfast burrito. These also make for a great healthy lunch option, too!

Ingredients

  • Tortilla wraps 
  • 3 eggs 
  • A knob of butter 
  • 1 cubed potato 
  • A bag of spinach 
  • 1 cup of diced mushrooms 
  • 1 sliced sausage 
  • Salt and pepper to taste 
  • Grated cheese to taste

Method

These are as simple as simple can be! Just fry up your diced potatoes in a heated sauce pan and then add the sausage and mushrooms. Keep cooking to your liking and then add the spinach to wilt. 

Scramble or fry your eggs and get your tortillas ready to assemble.

Lay your veggie and sausage mixture onto your wrap, add your eggs and sprinkle on your cheese. Wrap up and fry lightly in butter, turning so it is golden on each side. 

Enjoy at the campsite or take it on to go.

Sweet potato and pecan pancakes

Who doesn’t love pancakes? This recipe offers up a fresh, healthy take on traditional pancakes and they’re perfect if you’re looking for a hearty, filling breakfast that will keep you going for hours.  This is a real crowd pleaser, great for kids and an ideal choice if you prefer the sweeter side of things to kick off your day.

Ingredients

  • 2 cups of plain flour 
  • 2 and a half teaspoons of baking powder 
  • 2 eggs 
  • 1 cup of milk 
  • 1 small sweet potato 
  • 1/2 cup of chopped pecans 
  • 1/4 cup of brown sugar 
  • 1/2 teaspoon of cinnamon 
  • 1.4 cup of melted butter

Method

Pre-roast the sweet potatoes wrapped in foil or simply peel, boil and mash them the morning of.

Mix your dry ingredients together in a bowl and then incorporate all wet ingredients as well as your mashed or baked sweet potato. When adding your milk, follow your tastes and preferences for how thick or think you like your pancakes. 

Once combined, heat a little oil or butter in a frying pan, dot the mixture down and cook on both sides until golden. Serve with maple syrup, berries or honey. You can even add some bacon if you like a sweet-and-savoury mix up in the early hours.

Mini campfire cob loaves

A mini cob loaf is a fantastically versatile recipe to get down pat, once you have it perfected you’ll find yourself reaching for one at every meal. Make them, save them, serve them, whatever you find yourself doing you’ll thank yourself for getting into the habit of creating your very own cob loaves on every camping trip. 

Ingredients

  • Large rolls or mini cobs 
  • 1/2 cup of cream cheese 
  • 1/2 cup of sour cream 
  • 1/4 cup of cream
  • 1/2 cup of grated cheese 
  • 1 chorizo or 2 strips of bacon 
  • 1 teaspoon of paprika 
  • 1 teaspoon of pepper 
  • Salt to taste 
  • 1/2 bunch of chives 
  • 2 eggs

Method

Cut the top off your rolls and scoop out the insides with a spoon. Fry up your sausage or bacon in a pan. 

Then, mix together the cream cheese, sour cream, cream, cheese, paprika, seasoning and chives and add to the meat. 

Once cool enough, spoon into the hollowed out cob loaf, make a well and crack in an egg. Sprinkle on as much cheese to your liking and finish with cracked black pepper. Replace the top or lid of your cob and wrap in a double layer of foil. 

Place in hot coals or cook in the camp oven for 20 minutes or to taste.
